Chicken Duel Meals
1 st night roasted chicken with favorite sides
2nd night chicken tacos or soup!
For chicken soup save the drippings from pan with chicken. With tacos discard the drippings and store over night separate. For tacos you will need one box of your favorite taco kit. A half a packet of the seasoning. olive oil half a bell pepper half a small onion minced. Salt, Pepper, Paprika to taste. 1/4 cup of water. For soup you will need 1 can of mixed vegetable or frozen. (frozen about a half a bag) Half a bag of egg noodles. Salt n' pepper to taste. 1 chicken bullion cube let dissolve in soup.
To assemble chicken tacos heat frying pan medium to high heat. Add left over chicken from night before. Swish in olive oil and stir add 1/4 cup of bell pepper (your color choice) add 1/4 cup of minced onion and salt and pepper and paprika to taste. add 1/4 cup of water and stir in seasoning packet. I find that less water is best due to the oil in the pan. Heat till done and serve with favorite toppings.
For chicken soup, in crock pot add chicken with the solid chicken drippings and two cups of water add either your canned mixed veggies or frozen (about a half a bag) into soup. Add the chicken bullion cube and let dissolve stir. Add salt n' pepper to taste. Remember cook on slow for about 8 hours three hours before you serve for stoup add egg noodles. For soup about 90 minutes test noodles before you serve.
