Stretching The Food Budget!

With gas prices and food prices at an all time high, it is a necessity to save money. An easy way to save on your food bill is making a duel meal. And this is good for all family members even if they don't like leftovers. When I buy a whole chicken, I save all left over chicken and the drippings from the bottom of the pan and put it into a container overnight. The first night we eat the chicken roast. The second night, I make a fresh pot of chicken soup. I use the drippings that have turned solid with the chicken into a crock pot on low with two cups of water. I add favorite fresh veggies. Depending upon weather or not you would like stop or soup is how long you cook the noodles for. An other meal to make with the left over chicken is easy chicken tacos soft or hard. I discard the chicken drippings and purchase our favorite taco kit. I don't use the whole seasoning packet I use half. And I use my own seasonings to make the mixture. I add bell peppers and onions to the chicken mixture for flavor! It is fun and easy and kids love chicken and tacos.

Another duel meal that I regularly make is my next to home pasta sauce. One night is Spaghetti and meatballs for the next day open face meatball hero's! It is a great way for saving money so you don't have to buy lunch everyday at work. I also make casseroles with the left over sauce too. It is a whole new meal with left over food.

Spiral ham is another great way to make many meals out of one meal. Spiral ham for Sunday supper. Ham sandwiches for lunch next day and the next night split ham n' pea soup in your crock pot. It is a crowd pleaser and a comfort food the ham n' pea soup. I will be posting recipes on how to make the pea soup and spaghetti casseroles on my blog and on facebook.
